Way back in June, to celebrate the big 1-3, we drove up to Boulder to take a cooking class at Escoffier School of Culinary Arts. The class, titled Totally Tapas, was supposed to be taught by a very warm and friendly woman I met on my yoga retreat. Adriana is from Madrid, a trained chef, and teaches at the culinary school. When my friend Betsy and I met her on our retreat, the three of us totally hit it off. I was excited to introduce Daniel to her and make the recipes she described as family recipes with her own modern twist. Unfortunately, when we got there, Adriana was nowhere to be found. Something came up and they had to get a sub, a fellow teacher/chef at the school. Too bad. The chef was excellent and we learned a lot, but I missed Adriana's energy and Spanish accent!
We still had fun making Adriana's recipes. Daniel and I teamed up with another student to make Gazpacho, Bacon-Wrapped Shrimp with Almond Sauce, and Grilled Peaches with Honey Mascarpone. Our classmates made an incredible spinach and apple salad, seared tuna, curried lamb, and tortilla española. Mmm. I feel hungry just writing about it!
