lentil cakes with poached egg and roasted root vegetables

Since I discovered this recipe on the gorgeous blog Cannelle et Vanille, I've made it about three times. It's a nice weeknight meal--healthy, affordable, and fairly easy. The only thing that takes time is roasting the vegetables. And the kids love it!
