Anyone hungry for Vietnamese spring rolls with almond-orange dipping sauce and a side of Casanovas?
The recipe comes from a cookbook/blog I'm really loving, The Blender Girl. The caramelized mushrooms were to die for, and look at all that beautiful veg stuffed into a rice wrapper. I added some sauteed tofu to boost the protein.
Everything I've made in this (vegan, gluten-free, healthy, easy) cookbook has been delicious, which means it's time to return it to the library (have had it checked out for two months now) and buy my own copy.
The Casanovas are from our friend Amanda's cookbook, 5280: The Cookbook. We got to help Amanda recipe-test, and this cocktail (tequila, serrano pepper, lime, vanilla, etc.) was a hands-down favorite.
Mmm. Will definitely be making those again soon.
